Yes you can have baked beans for dinner! These are a great weekday option as they are quick and easy to make but still contain plenty of fibre and nutrients. We have simply boiled the potatoes here but if you have more time bake them in the oven to crisp them up post boiling or mash them if you like or to save on more time buy a loaf of wholemeal or sprouted bread and have that with the beans.

Mushroom & Leek w Brown Rice

This is similar to a risotto but doesn’t require all the stirring! Simply cook the mushrooms and rice separately and bring them together at the end. Similar flavours with a lot less attention and fuss required.

Roasted chickpea & Farro Taboulleh

This recipe is a great way to use in season tomatoes and fresh herbs.
Taboulleh traditionally uses bulgar wheat but we have used farro here. Farro is an ancient wheat grain. It has a nutty flavour and chewy texture. It is a good alternative to rice or quinoa. It is nutritous and contains lots of fibre, protein, magnesium, zinc and b vitamins.

This recipe is so quick and easy! Once you have chopped up all the veg it’s just a matter of throwing it all in a soup pot really. You could use an array if different veggies too; carrots, cauliflower, bok choy would all be great too. Use what you have on hand when remaking the recipe if you like, make it your own 🙂

Featured legend of the week: Bridget Francis of Curry Favour

We all know the best curries are made from fresh curry pastes. But they take time to make, and we’re all busy!

 

That’s why at Curry Favour we make fresh, vibrant Thai curry pastes that pack a punch! We make our pastes here in Melbourne in small batches to maintain quality and flavour from fresh Australian ingredients, toasted and ground spices and a pinch of sea salt.

 

Curry Favour started in 2017 by Bridget Francis who grew up in South East Asia and has been a Chef in Melbourne for the past eight years. Bridget was making fresh Thai curry paste in a restaurant and  wanted to make it at home but found it too labour intensive for one meal.  And like most people, Bridget was busy!. The alternative was curry pastes found at supermarkets but  most are made overseas and full of preservatives, oils, hidden sugars and ingredients you cannot pronounce.

So Bridget created a range of delicious Thai curry pastes that are quick and easy to use, catering to different heat levels and dietary requirements.

As our resident nutritionist, at least 4 recipes per month are created for you, by Hannah.

My name is Hannah Thompson. I am a qualified nutritionist completing both a bachelor’s degree in health sciences majoring in nutrition and a Master of Human Nutrition from Deakin University. I have also completed the Cornell University plant-based nutrition certificate.

I have had a diverse set of work experience since completing my studies; I have worked in cafes and restaurants helping to both prepare food and design meal plans and educate staff and customers on the benefits of a whole food plant-based diet. I have worked alongside a multi-disciplinary team to deliver the “Whole Food Solution” a 3-week workplace nutrition program based out of the Knox City Council. I have worked privately delivering nutrition education to individuals and groups from the beautiful space that was Ecofit a plant-based gym. I currently work at a health food store where I help with nutrition information signage, cooking demos, newsletter information and staff and community education as well. To top all this off I work alongside Jess and Shan at the Nourish Box to develop recipes and meals that are balanced and delicious.

I believe in the importance of people adding more plant foods to their diet, the benefits are not just for the individual’s health but for that of the planet. And that is why working with Jess and Shan and the Nourish Box is such a pleasure as the message behind what they are doing is to simple and important to EAT MORE PLANTS… I couldn’t agree more!
